Ingredients
- ½ cup coarsely chopped walnuts
- ½ cup greek yogurt
- 2 tablespoons light mayonnaise
- 2 teaspoons honey
- 1 lemon, juiced
- Salt and pepper to taste
- ¼ cup craisins (dried cranberries)
- 2 apples, chopped
- 2 celery ribs, sliced
- ½ cup seedless green grapes, halved
- ½ cup seedless red grapes, halved
- 1 head of butter lettuce
Instructions

Preheat the oven to 350F. Spread roughly chopped walnuts on a foil-lined baking sheet and roast in the oven for 10 mins

Make the dressing by whisking together yogurt, mayonnaise, lemon juice, honey, and salt and pepper to taste

In a medium-sized bowl, add chopped apples, sliced red and green grapes, sliced celery, roasted walnuts, and craisins.

Add the dressing and toss carefully to coat everything well. Serve over a bed of butter lettuce leaves.
