HEALTHIER WALDORF SALAD

Ingredients

  • ½ cup coarsely chopped walnuts
  • ½ cup greek yogurt
  • 2 tablespoons light mayonnaise
  • 2 teaspoons honey
  • 1 lemon, juiced
  • Salt and pepper to taste
  • ¼ cup craisins (dried cranberries)
  • 2 apples, chopped
  • 2 celery ribs, sliced
  • ½ cup seedless green grapes, halved
  • ½ cup seedless red grapes, halved
  • 1 head of butter lettuce

Instructions

  • Preheat the oven to 350F. Spread roughly chopped walnuts on a foil-lined baking sheet and roast in the oven for 10 mins
  • Make the dressing by whisking together yogurt, mayonnaise, lemon juice, honey, and salt and pepper to taste
  • In a medium-sized bowl, add chopped apples, sliced red and green grapes, sliced celery, roasted walnuts, and craisins.
  • Add the dressing and toss carefully to coat everything well. Serve over a bed of butter lettuce leaves.
